Problems with your questions - you are assuming ultra-Orthodox and Chassidic (and some Orthodox). A LOT of Jews are Reform, Reconstructionist (esp. in the US where this movement started), and Conservative.
Bagels? Those are NY foods, not "Jewish"! Talk to a Sephardi Jew and they may not know what a bagel is! BTW - I LOVE bialys, but try and get a decent bialy outside of NYC? Can't find it worth a darn! Falafel? Middle Eastern food; same as bagel - some folks may not know.
Hatikvah? A number of ultra-Orthodox Jews and Chassidic Jews are not Zionists (hence the anthem). They prefer to recognize Israel AFTER the Moshiach comes.
Clothes? Good grief! The people in my shuls were clothes horses! I now live in a Mennonite area - can we say "lot of gray and brown"?

Edit: OK, I was going by your answer to Am Yisroal Chai - you mentioned what you observed.

According to this I am only 1/6 Jewish - I like bagels and I like falafel! Haha. I know you do not mean that you're only Jewish if you do all of these things, but still... there is much more to being Jewish than kippahs and bagels. :)

I'll answer but this is in no way determining how Jewish someone is. There are people who didn't grow up going to Yeshiva(children don't get to choose) but grow up to be great philanthropists and Zionists. I know a whole community of Jews who are self loathing, anti Semetic, and anti Zion(my sister is baal tshuva in Kiryas Joel so I know their theories). Anyway, here are my answers:
