I look at the person in the eye and say a meaningful "thank you" like i really mean it.... ^_^

i use many terms depending on the situation :

with friends > thanx bro .. gracias hermanito ... marsoo (my version of merci) habibi 3azzabtak ma3y ..

with officials > shokran seydtak / 7adretak but i don't use it often ... i just can't .. so shokran 7af =p ..

with foreigners > thank you sir/ma'am .. merci beuacoup monsieur/mademosaille/madame .. gracias senor/senorita/senora .. arrigato guzimas (works with Japanese only lol)

with strangers > thank you .. shokran .. merci ..

I bake them a cake or cookies...seriously I do. It goes a long way and is always appreciated.

You can thank them or do something for them that you know will mean a lot to them. Usually when you thank someone for something and it means a lot to you - you will say it straight from the heart and they will be able to feel it and know you mean it.
If you are feeling awkward about thanking them - you can still thank them and let them know that you feel awkward saying it but really appreciate what they have said/done for you and that you want them to know how much the gesture has meant to you.

oh I just tell them usually..

yesterday i was looking through all my stuff i collected over the years and i found some birthday card from people at work. Today I saw these people and I told them I was reminded about it and it really meant so much to me.
sometimes i'll remember stuff again long after and thank them again. everyone wants to know if they had a meaning or did something good that was remembered. people too easily rememeber bad stuff!

you can express by many things:

say " thank you"
say that you appreciate what was done & the support you have got .
you can send flowers or make any pleasent gesture..... " a thank you" card would be nice.....
