well..for me ultimate doesnt mean the newest...for me ultimate is the touched one.
In spanish there are many..there is a genre of romantic music called BOLEROS, that are all love songs. The main singer for them is Luis Miguel.......a mexican singer and I like him very much, specially one song "Sin Ti" (without you)...and "Sabor a mi" ( taste of me)
But there is an old romantic song from an american singer called Bobby Goldsboro, from the 60's , that I liked so much and still like it nowadays.
The title is "Honey", and brings me nice memories.

i dont really like any english love songs, in spanish i LOOOOVE La tortura- Shakira but its not necessarily a love song more about a man begging for forgiveness from his ex love.

and i loev alot of Wael Kfoury and Najwa karaam's old songs, like Ana ma fiyye, Mein Habibi Ana, Shu Ra'yek, qassid bayteek, maghroma, ma berda ghairak, etc etc..

Oh, I don't think I could pick one song that I thought was THE ULTIMATE love song...so many of them are touching...most of them bring tears to my eyes (being that I am such a sap)...

But there is one song that I always find particularly touching...I think because the sentiments are those that any woman would love to know that she inspired. Wouldn't you love to know that these thoughts were going on in YOUR guy's head?
