Believe it or not but the best way to overcome your phobia of flying is to learn how to fly yourself, and I believe one other person already gave a similar answer. People fear flying for mainly one reason: they don't understand it. I believe it was Churchill who once said "We fear that which we do not understand."
Go to a local municipal airport and look into getting your pilot's license. You'll learn not just how to fly an airplane, but more importantly, you'll learn exactly what "makes" an airplane fly. Once you fully grasp the simple aerodynamics of flight and what keeps those big birds aloft, you'll feel more at ease the next time you're seated in a passenger jet.
The total cost for getting your Private Pilot's License will be around $5,000 (that includes airplane rental, instructors' fees, books, supplies, exam fees, and other misc. expenses). The FAA requires a minimum of 40 hours in order to get your license but most students take longer than this (I didn't get my PPL until I had 140 hours, but that's a bit of a stretch, most students have theirs by the time they've logged 60 or 70 hours).
You can solo with a minimum of 10 hours I believe, but your flight instructor won't sign you off to solo unless he/she is convinced that you're comfortable flying the airplane.
Flying is an expensive but wonderful hobby. Once you fully comprehend how airplanes work, you'll be fine.
