I am flying from England and changing flights at amsterdam to fly to America.

You can use USD or GBP at Amsterdam Schipol airport.

From Amsterdam airport website:

Accepted forms of payment:

Banknotes in all major currencies are accepted (at the going exchange rate).
When you pay in foreign currency you will receive your change in euros.
We accept all major credit cards (such as American Express, JCB cards, MasterCard, Visa, Diners, Club International, PIN, Maestro, and Traveller's Cheques in denominations of EUR 100 or less).
Amounts (in euro cents) will not be rounded off.

the shops and cafes will take both dollars and sterling,change ,if any will be in euros.

They'll take £s & $s but you'll be ripped off on the exchange it usually works out at a 20% mark up. Buy a few Euros, if you don't spend 'em all now they'll come in handy in the future!

Flight side they will take any currency but give you change in euros. Take some euros or get some out of the ATM at AMS as the exchange rate will be terrible in the shop

Official currency used in Amsterdam is the Euro.
You can however change Money at one of the many banks at the airport.

If you're staying in the terminal than they'll accept any major currency, but will give you change in Euros. You can also use your credit card or bank card with visa/mc logo (best option if there only a few hours). This would give you the best rate, and you won't have to deal with re-exchanging your currency. There are also ATMs, use those over any currency exchange booths, because the exchage rate is going to be the closest to the bank prime rate any of us can get. Do this especially if you're leaving the airport for a few hours.

Also, if you have any coins left in pounds, look for coin currency exchange machines located in the airport that will convert coins into currency, as you won't be able to convert any coins at the booths. Sometimes there are coin depositories for charity, for any unwanted coins.

I tend to keep a lot of extra money as souvenirs. At home I have a whole Vegas coin cupholder full of foreign currency, esp all the ones that existed before the euro.

If they don't accept the money there, there are plenty of places within the airport where you can exchange money.

Good question.
I would presume you would be able to, because england and the USA would be the majority of people travelling to Amsterdam.
