Who knows? For all you know, that star you are/were looking at may not even exist! They could be millions of lightyears away, having their brightness just reach Earth. They could've exploded thousands of years ago, but their explosion is not yet seen.

There is no specific answer. 1000000000000000000000000000000000000000...

And that's just the tip of the ice berg. Stars are constantly forming and dying. And sometimes we can even count all the stars. And that's just within OUR Milky Way galaxy. And sometimes we can't even see some stars as a result of dark nebula that cover some stars.

There are an estimated 10^10 (10 billion) stars in the Milky Way..
there are an estimated 10^10 galaxies in the universe.. (pretty easy to remember so far, huh? ...*grin*) so that makes 10^20 stars total. Now if you meant: how many can be SEEN in the night sky, then the answer is far, far smaller than 10^1 0, maybe a few thousand on a good, clear night.
