There is an excellent chance the police would be waiting for you when the plane landed and you would face federal charges for attacking a member of the air crew. You might also find yourself on the No Fly list even if you escape being convicted. Not a joke.
"Accidentally" pinching a flight attendant sounds very unlikely. Even if it's an accident you may find yourself in the position of being arrested and then having to somehow prove you are innocent.
