By 'planes' I will assume that you mean jets e.g. Boing 737's and the like. Most aircraft have on board computers that can estimate the best cruising speed and altitude for optimum fuel efficiency based on best estimates of load i.e. passengers, luggage and even the actual fuel upload.
As an example, say you are flying from LHR to CDG. The distance is perhaps 600 miles. The aircraft loadmaster will have figures to hand as to how many passengers, average passenger weight, weight of luggage, and fuel upload. It is possible for a 737-400 to do this trip on say 3/4 fuel caacity, thus less weight, and all the available figures are fed into the computer, also taking into consideration the prevailing weather conditions, and a set of figures will be arrived at that will give the captain the necessary minimum cruising speed and altitude, and the aircraft's other computers will use this information and constantly adjust all the necessary flight characteristics whilst in flight to ensure a safe flight and an economical one. So, in essence, it can be as little as 400 mph providing they have a tail wind i.e. they are being wind assisted, but then again, they also have necessary flight timetables to adhere to, so you can use a best estimate of around 530 mph although aircrafts speeds are usually in knots, and 1 knot is aproximately 1.25 mph or 1 nautical mile per hour.

Jets fly at an airspeed of around 500 mph, short or long haul, provided the flight is long enough for them to reach cruising altitude.
Propeller-driven aircraft are much slower, typically 200-250 mph.
(Of course, in either case, the average speed for the flight is less, because of time taken to climb, approach and land, not to mention taxi and disembark passengers). |

Short haul jets such as 737, A320 etc will cruise at about 840 kph airspeed provided the flight is not too short. For some tiny hops of less than 40 minutes duration they will not get to normal cruise speed. Prop planes will not reach 840 kph nor will they attain the same altitude as a jet but they will be 300 to 500 kph max. The 747 is actually quite a fast plane once it gets going but it takes a long time to get up to height and speed. Thats why it is such a good plane for flights of 8 to 14 hours. Normal cruise altitude for jets is around the 33000 to 38000 feet but short hops might get no higher than 21000 feet. |

Roughly the same speed regardless of Short Haul or long haul. Ground speed (Cruising) is 450-500 knots. Airspeed of course depends on a headwind or tailwind
