You don't say how long, but walking is definitely best. It will help reduce the risk of DVT (deep vein thrombosis) a potentially life threatening condition.
If you want to get good rest, plan for the trip a few days in advance. Cut down and gradually eliminate cafeine, and drink plenty of water. Flights are very drying, you'll feel better and rest better if you're hydrated.
Take some earplugs and an eye mask to help with sleeping if you plan to sleep.
The meals on long haul flights are also designed to help you sleep easier believe it or not. Don't undo that by drinking a soda.
And enjoy the flight and the movie.

Get up and walk to the restroom every few minutes. You can't excercise as much unless your flying business/first class.

Its called "Progressive Relaxation" You tense and relax every muscle in your body, starting at your face and working your way to your toes. It's a good way to stretch your muscles as well as relax yourself. =)

Take deep breaths and listen to soft music. Close your eyes when you are taking off. I have been through it. I am scared of heights.
