What a generous Mum you have. It depends what time of year you are planning to go away and how much you want your Mum to spend on you but I'd recommend Menorca for some spring/summer sun and sea (also reasonably priced). Florence for a city break with culture, fun and shops. Miami or Dubai if your budget is higher - fun, sun, sea and shops

Go to Taiwan. Friendly people, greatest sales at night markets, Beautiful scenery and nice beaches. I know because I was there 6 years. You do not need a visa for a stay of 1 month.

Forget the sun and the sea - go to Paris. Very romantic and great shopping. Tons to see. Great bars, great restaurants.

If you can afford it then go to Dubai, it has all the above and the weather is fab then. However, Canaries is cheaper and warm and has a lot to offer. Or if you really want to go long haul then Sydney is wonderful.
