EVA (BR) is an average airline... nothing to write home about, but not bad. They get you there comfortably. Food was alright.
Cathay (CX) is consistently one of the best airlines in the world, usually battling Singapore Airlines for the top honor. Onboard service was terrific, HKG airport was an absolute pleasure to transit (and if you had about 4 hours you will have time to visit Hong Kong... something you'd need more time to do with Taipei, and TPE airport didn't have much).
The one thing against CX is that it's a VERY long flight from the US to HKG (then ~2 hours to Vietnam). US-TPE-VN splits the total trip up more evenly. Also, CX tends to be a bit more expensive than BR.
All things being equal, I would fly with CX. |

My personal experience: I prefer eva. Many people have heard of cathay, but have never heard of eva. I have taken flights on both. eva is from taiwan, cathay is from hong kong, which was for a long time a british colony. cathay staff can be very servient but depends on who you are. |

Cathay used to be very expensive..but this year it's cheaper ,
