You're coming in late autumn so it's not the best time of year to explore Nature. Here's a link to beautiful places for birdwatching near Buenos Aires:

Recoleta is a great area in BA, very artsy. Also, Puerto Madera. Flights are the best & fastest way but can be $.

You can go to "estancias" to get a taste of the gaucho's life. You may stay for the day or you may stay overnight. That is cheap and there are very nice places about 1 hour away from BA. The towns where these "estancias" are could be San Antonio de Areco, Lujan. There you are going to have "asado" and "mate". |
