The "kaskas yelo" is an essential ingredient; the ice cream is extra. Halo-halo with ice cream is usually considered a special variety in restaurants and halo-halo stands. For example, ChowKing sells essentially two kinds of halo-halo: with or without ice cream (and for the latter you can choose between one scoop or two), and one can have either in one of various sizes.
When ice cream isn't available (especially where it's tough to keep it from melting into ube- or melon-flavored milk), the sugar and evaporated milk adds the creamy taste, and the debate is on which brand of evap is the best (usually Liberty vs. Carnation).
FYI: Americans find halo-halo weird because it contains corn. They're not used to finding corn in their desserts. They should try Japanese pizza. |

halo halo is with shaved ice, the ice cream only comes on top.
It is like ice kachang of our malay and singapore neighbors, though I dont know if we came first in making halo halo.
the ice should be finely shaved, not the crushed variety which leaves some large chunks in the halo halo. this is tough to munch specially when you think you have a hearty serving of sweet banana and langka with ube and you bite into hard ice. owww.
top you halo halo with leche flan and caramel ice cream or vanilla del luxe or mantikado. yummy

I like Halo halo with complete ingredients:
Boiled red mungo beans, kidney beans, garbanzo beans, sugar palm fruit (kaong), coconut sport (macapuno), and plantains, jackfruit (langka), tapioca or sago, nata de coco, purple yam (ube), sweet potato (kamote), sweetened corn kernels or pounded crushed rice (pinipig), leche flan , and gelatin. Fruits, such as papayas, avocados, kiwifruit, bananas or cherries, are optional.
