You don't really but bear in mind that eateries often get inspected and therefore ought to be in compliance with ordinances; otherwise they could be fined or shut down. Or worse, they get publicized as having failed sanitary inspection standards and certainly that is not good for business. So in most cases, they do maintain fairly good level of cleanliness in the food preparation area and with the kitchen staff too.
As to the spit, that is most likely not to happen UNLESS you incur the ire of your server. |

The only time you would have someone working in the kitchen is if you complain about the food, return it to be cooked again or ask for something else since you are happy with what your ordered. Most cooks get pissed off and that is there secret weapon of getting back at you. Also, underpaid cooks always take it out on the customer. Remember, there is more than spitting that goes on in the kitchen and I don't think you really want to know about it.
But like most already mentioned, pick a respectable food establishment or eat where food is cooked before your own eyes in open kitchen. |

I used 2 have a Friend who used to do so ! since there is no any machine that can tell that the food that U R eating is spit free 4 me the option will be : stop eating at food-land . eat at home !! and if u do not have time for home food kindly go and eat biscuits and milk or eggs |

No guarantee that what I eat is clean. Even if the dining place or restaurant is squeaky clean, it does not mean that the food served is clean. No way of knowing except if you ask to be shown the kitchen and inspect all the utensils and food inside which, you know, is improbable unless you are a sanitary health inspector. I just hope that what I eat do not make me sick. It's a risk every one takes when dining out, I'm sure. |

the spit i would not mind so much....it not washing hands after going to the toilet that i would have the problem with ewwwwww |

You will not unless it is visibly obvious. If you do not test the customer service/ hospitality ability of your food server, tainting of your food is less likely to occur. |
