I'm from Iloilo, and I should be proud to cook it for myself and present to the gathering. Ladies and gentlemen the best that I can offer you!
KBL! ! !
Kadios, Baboy, Langka :-)
Those of you who want to try this menu, you can have it at Ilonggo Grill in Glorietta - Makati.
KBL is a soup.
Kadios is a black round beans, as far as I know can be found only in Panay Island particularly in Iloilo and Antique province.
Baboy means "pork"
Langka means "jackfruit" its not yet ripe.
Yummy soup, I missed it. |

4. prep steak
a.get a nice fresh cut of meat from your local butcher
b.rice wine vinigar/soy sauce
c.cane sugar
soak meat in this mixture for 20 minutes
5.sear both sides of steak then wrap in banana leaves to lock in moisture and cook till you like it
then eat with your hands and of course RICE

I will cook chicken and pork adobo with lots of garlic and a sprinkling of bay leaves, with a generous amount of soy sauce and palm vinegar. I might even spike it with red siling labuyo (Filipino hot pepper) instead of ground pepper, if no one objects.
I'll also bring kare-kare, with tender honeycomb tripe and oxtail with string beans and eggplant in peanut sauce, complete with bagoong alamang (shrimp fry).
Then for dessert there's golden brown turon (banana wrapped in eggroll wrapper) heavily glazed with brown sugar. |
