The best Japanese word for a total non-speaker to learn is sumimasen. (SU-MI-MA-SEN) It can mean a wide variety of things including:

Excuse me (I need your attention)
Excuse me (Sorry I stepped on your foot)
Excuse me (You're stepping on my foot !)
Sorry (I got drunk and crashed your car)
Thank you

If you only learn one word in Japanese, sumimasen is probabably the best place.

Sumimasen!!! (Excuse me.) Very useful for attracting attention from waiters and salespeople, as well as getting people out of your way on train platforms.

Also, not that you would use this one yourself, but you'll hear "Irashaimase" (Welcome or May I help you?) all the time from street vendors and sales ladies in department stores.
