taho - its made of soy bean, mixed with caramel and tapioca (sago) every filipino kids grew up with this.
adobo - every region in the phil has its own version it reflects the culture of its origin, you should try at least 3 varieties.
halohalo (look for razon's halohalo) - its a mixture of all sweet deserts with milk and ice, perfect cooler during hot afternoon
suman - snack/desert made of rice cooked with coconut milk, you can mix it with chocolate, fruit jam, caramel, sugar anything.
ripe phil. mango - you'll find the best one only in the philippines
giniling (ground pork/beff) its also widely cooked all over the country, a traditional dish
bicol express - hot hot hot
sisig, every restaurant has this - just watch your cholesterol level. its perfect with beer
philippine's seafood variety - go to DAMPA in baclaran or eastwood, you will buy fresh seafood from the market and they will cook it for you (your choice eg. buttered prawns, scallops with tausi or broccoli, baked mussels with cheese and garlic, lobsters and tilapia)
balut - other people find it weird but if you really want an ultimate filipino gastronomic adventure, you should try it.
this meals wouldn't be a true filipino experience if you eat it alone, make sure you tag along some friends and enjoy it together over a good conversation

kc c .... gosh hard question .... a simple but tasty food could be ADOBO (chicken or/and pork) with pineapple tidbits, and raisins to make it special. Chop-suey seafoods would be great if you love veggies. Sinigang na hipon, nilagang baboy I would not reccomend unless there's a great cook to do it (like me). ... for dessert, if you want sweets leche flan (using pure red ducks egg) would be great.... stuffs??? try some durian candy. they maybe small but when its done you'll gonna look for more. they were tasty and not so sweet. |

well, try kare-kare, sinigang na hipon, rellenong bangus, roast pork (Lechon Baboy). Then for dessert......leche flan, halo-halo, puto bumbong, mangoes, durian, halayang ube.

Wow! It's great you want to explore your roots :) I will give you a rundown of the famous restaturants and what made them famous. Try halo-halo in Razon's or Chowking. Sisig and crispy pata are a must in Gerry's Grill. Both have branches in Manila. Sonya's Garden in Tagaytay serves good vegetable dishes (veggies are homegrown). Bulalo is also good in Leslie's (in Tagaytay and Alaban Town Center). Kar-kare is good in Country Spice (Tektite Towers, Ortigas Center Pasig City). Chicken bbq (inasal) in any Chicken bacolod or inasal restaurants. Try as well their native chocolate drink (tsokolate).

shrimp halabos - marinated then boiled shrimps with salted vinegar as dipping sauce (great to eat at the beach).
leche flan - custard dessert, very creamy and very good if made just right :)
kare-kare - oxtail in peanut sauce. very good served with shrimp paste (bagoong). a very filipino dish, best served with steamed white rice.
chicken and pork adobo - staple Filipino food. Very tasty and easy to cook.
bulalo - boiled beef meet, bones and marrow. cooked with some vegetables and served with rice. very homey. great during rainy season coz of the soup. some accompany it with fish sauce or soy sauce with chilli. although, you shouldn't eat this all the time, the marrow, though very very good, is high in cholesterol.
pandesal - Pinoy bread. best eaten hot. buy it early in the nearest panaderia (bakeshop) early morning and you can eat it with cheese, adobo, sardines, eggs or anything you want for breakfast. buy lots. best breakfast.
fried squid - good beer accompaniment or "pulutan" as it's called. served with vinegar dipping sauce. yum.

Of course being Spanish.., filipino foods are no difference at all...but for a change, you may try our very own "SISIG" and "ube-macapuno" sweets or "Saging na Saba con Yelo" to name a few...or maybe "Papaitan", "Bicol Express", "Laing", and "Pancit Palabok"... |

ALL the varieties mentioned. in this answer section. married to a Philipplna who was tayght by her mum!! how to cook, 99% of all the dishes mentioned [ Mum runs a restaurant] proper one NOT a streetstall version!!yet when MUM cooks at HER best THE GOOD OLD gasburner and or charcoal oven/pot I have been told by my doctor, that my cholesterol count will NEVER subside, that i MUST take medicine to keep it down, I WONDER WHY???!! |

filipinos are very well known for their adobo, and in different part of the country there are different variations as well, like the tagalog adobo, its somewhat dry and alittle sour, in bicol its sweet...
I would also recommend a strange but very popular food combination, its dinuguan and puto (some americans refer to them as chocolate soup and white bread), but really it is a viand made up of pork´s blood (but it is really delicious) and the puto is made up of either flour or rice grain...
for dessert I´d go for halo halo as the first answerer said, its like tasting the different regions of the philippines because it is made up of different fruits nuts jellies etc.,..

Balut is a bit of a shock to westerners. Boiled, fertilised egg, with a partly-formed 10 day old chick inside. Eaten with salt and vinegar.
Best avoid the eyeballs, but the rest is not too revolting in appearance. Tastes delicious though.
Best foods are made in Pampanga (in my opinion). |

Special halohalo: it has leche flan, ice cream and pinipig among its ingredients. Refreshing on a sunny day.
An even greater treat: special halohalo inside a fresh coconut. Fresh coconut is naturally very sweet, and you may use part of the coconut's shell as a scoop. How cool is that? |
