There are many traditional dishes in SG. It's usually a mixture of different ethnic groups. I'll list down a few places that you can try below . Of course, all these foods can be found in most hawker centres in SG.

1. chicken rice - It's all in the rice; fragrant and chewy.
Shao Kee Chicken Rice (02-25 Hong Lim Market & Food Centre, Blk 531A Upper Cross St)

2. Pork Rib Soup - Like Chicken Rice, it's all in the soup. Got to have herbal undertones. Pork should fall off the ribs.
Ng Ah Sio Pork Ribs Eating House (No. 7 Keppel Road #01-05/07 PSA Tanjong Pagar Complex)

3. Roti Prata - A fried dough pancake. Goes well with curry. Also try the Murtabak (a fried dough pancake with meat, eggs and oinions stuffed inside it. A beefed-up version of the Taiwanese Oinion pancake). We affectionately call these places "Prata shops"
Al-Jilani Restaurant (127 Bencoolen St)

4. Carrot Cake - I like the black version. It's a little sweeter.
Food Street Carrot Cake (Stall 4, Chinatown food st, smith st)

5. Fish Head curry - It's a big fish head floating in pot of a curry. Usually served in Indian restaurants. Try the Masala chicken, Dhaal. Go with friends.
The Banana Leaf Apolo (Serangoon Road) (48 Serangoon Road #01-32 Little India Arcade)

6. Laksa - White noodles smoothered with spicy coconut gravy. Has cockles and other ingredients with it. The measure its taste is in the gravy: rich and almost cloying.
Sungai Road Laksa (#01-00 Blk 27 Jalan Berseh). Katong Laksa in Katong.

7. Drinks - Teh Tarik can be found most Indian restaurants / prata shops. Also try Milo Dinosaur (Milo with milo powder on top of it. Garuanteed sugar rush), Kopi/Teh-Cino (the milk and teh/kopi floats on top of each other. Like watching a lava lamp)

8. Nasi Padang - Like economic rice (i.e. Chai Fan) but with an Indonesian bent. Try the beef rendang.
Warung M. Nasir (Killiney Road) (Not cheap though. about $5 - $6 / meal) There are other places to try Nasi Padang.

9. Nonya food - Ehhh... Sorry. I'm sorely lacking in this area. But Katong Village (east of Singapore) is said to have some superb Nonya food.
Ivin's (Binjal Park, Bukit Timah)

Try the hawker centres that were mentioned by the other posters. If you're in Tanjong Pagar area for lunch, Maxwell Market / Amoy Street food center is always a good bet.

Tips:
1. Bring friends. Easier to sample many things at once.
2. Buy a copy of Makansutra (guide to local hawker food) from a bookshop (SGD 10 / guide). There are probably other food guides as well but Makansutra is one of the more famous.

Enjoy.

I believe that the bread you are refering to is Roti John:).

For authentic indian food, u can try visiting race course road at little india. There are several famous restaurants such as Banana Leaf Apollo, Muthu's curry and they serve one of the best fish head curry in town. Although it's much pricier than the hawker centre (foodcentre), the food is definitely worth the price.

Otherwise, try visiting the hawker centres such as maxwell foodcentre, adam's road foodcentre. They have most of the local delicacies such as carrot cake, roti prata. Maxwell foodcentre is famous for its chicken rice, deep-fried red bean cake (which you can fry it yourself), porridge.

If you don't mind paying for more for local hawker food, u can try visiting gluttons by the bay (at esplanade). They have practically most of the local dishes.

Must try local foods:
Hainanese Chicken Rice, Bah Kut Teh, Roti Prata, Char Kway Teow, Chilli Crab, Grilled Stingray with Sambal Paste, Barbequed Chicken Wings, Oyster Omelette, Frog's Legs Porridge, Prawn Noodles, Soup Tulang, Murtabak, Roti John, Nasi Goreng, Nasi Lemak, Carrot Cake, Fish Head Curry, Laksa, Rojak, Satay and so on.

For dessert, try: Ice Kacang, Bubor Cha Cha and Cheng Tng (served hot or cold).

Fruits will be Durian, Rambutans, Mangosteen, Long-Gans, Lychees etc. (depending on season)

You can refer to this link for detailed explanations of the food:

Most of the dishes stated above can be commonly found at hawker centres, food courts and kopitiams. These are places where the locals frequently eat out at and food there are reasonably priced and affordable.

Some popular places frequented by locals and tourists alike will be: Lau Pa Sat, Food Street (Smith Street, Chinatown), Newton Circus Hawker Centre, Geylang, Changi Village Food Centre, Golden Mile Food Centre and Maxwell Food Centre etc. Do ask the cab driver for recommendations since they are always on the roads and know many food haunts.

Lau Pa Sat -
18 Raffles Quay
Overwhelmingly wide selection of local ethnic food to tempt your taste buds: Otah, Popiah, Laksa and Satay. Don't miss the Teh Tarik served by a makeshift stall near the corner of Boon Tat Street and Boon Tat Link. They also provide Ginger Tea and Coconut Ice.

Food Street -
Smith Street, Chinatown
Mon-Thurs, Sun & Public Holidays: 5pm – 11pm
Fri, Sat & Eve of Public Holidays: 5pm – 1am
Al-fresco roadside dining among the beautifully restoring shop houses of Chinatown. Do try local dishes like Char Kway Teow, Carrot Cake or Rojak. Special recommendations include Hoover Rojak, Boon Tat Street BBQ Seafood, Whitley Road Big Prawn Noodle and Tiong Bahru Hua Yuen Porridge. There's also lots of other good food at great prices you can find in the Chinatown Complex Hawker Centre on the 2nd floor as well as at the People's Park Food Centre near OG.

Newton Circus Hawker Centre -
Serve local delicacies into the wee hours. This place opens until 4am in the weekends. Try the mouth-watering Tiger Prawns baked in Black Pepper or Grilled Stingray with Sambal Paste, Barbequed Chicken Wings at the barbecue seafood stalls. Also must try the Oyster Omelette, Prawn Noodles, Muslim food like the 'Soup Tulang' (lamb bone sticks soup). Other dishes include 'Murtabak', 'Roti John', 'Roti Prata' and 'Nasi Goreng'. For dessert, try the various types of local desserts, like ice kacang, bubor cha cha and cheng tng (served hot or cold).

Balestier -
There are a few shops serving peppery types of Bah Kut Teh (pork ribs soup served with rice and fried dough fritters) along the stretch. If you want herbal types can try Killiney Kopitiam Chinatown at No. 271 New Bridge Road.

Geylang -
Locals from all over the island congregate here for exotic local dishes like Dim Sum (126 Sims Avenue Coffee Shop), Frog's Legs Porridge, Fish Head Steamboat, Beef Kway Teow bathed in dark savoury sauce and crispy Fritters (You Tiao) served with hot Soy Milk. The area is also famous for the many roadside durian stalls offering D24, the XO of durians.

Maxwell Road Food Centre -
Hum Chee Beng, Lor Mee, Nasi Lemak, Wanton Mee, Ngoh Hiang Fritters etc. Also must try:
Tian Tian Hainanese Chicken Rice, Stall 10

Makansutra Gluttons Bay -
#01-15 Esplanade Mall
daily 6pm to 3am.
Dine and snack local style on some of Singapore’s best loved street food icons like Char Kway Teow, Chicken Rice, Chili/Pepper Crabs, Mee Goreng, Oyster Omelette and BBQ Chicken Wings and more. Cool down with the sea breeze with a cool Sugar Cane drink or a tall glass of cold beer.

East Coast Lagoon Food Village -
1220 East Coast Parkway

Serangoon Garden "Chomp Chomp" -
You'll get your fill of BBQ stingray, won ton noodles, fried carrot cake, laksa, sugarcane juice and more from the 20-odd stalls here

Golden Mile Food Centre
505 Beach Road
A couple of stalls there are famous for their standout dishes. Do try the Char Kway Teow, Hainanese Chicken Rice and Curry Chicken Noodles etc.

Alternatively if you want to savour local dishes in one seating, check out StraitsKitchen, a buffet restaurant located in the Grand Hyatt Hotel at Scotts Road. StraitsKitchen presents the best of local cuisine in a contemporary 'market place' setting. Ambience there is good and so are the food. The restaurant also serves exquisite food in upmarket surroundings, including good BBQ Seafood.

Hihi... Welcome to Singapore...
Food that you have to try while in Singapore are:

1) Rojak-It's a appetiser (salad) made up of pineapple, turnip, beansprout, you tiao with prawn sauce...

2)Hainanese chicken rice- My favourite stall is the one at Downtown East (Pasir Ris) food court.

3) Fish head curry- There is one restaurant at Race Course Road (Little India)... Muthu's Curry that serve really good and spicy curry fish head...

4) Curry/ chilli crab- the one at Jumbo seafood restaurant (Boat Quay) or No-Signature restaurant (Esplanade)is really good.

5) Roti prata- the "so-called" indian pancake to be eaten with curry. Most food courts/ hawker centres sell this.

6) Satay- barbeque meat (chicken, beef, mutton, duck, pork) to be dipped with a spicy peanut sauce@Lau Pat Sat(Raffles Place MRT). There is one area that have many stalls selling nothing but just satays. You can also find teh terik there...

Enjoy ur stay in Singapore... and Happy Eating!!!
