CRAB RELLENO !

Ingredients:

2 pieces cooked crab
2 teaspoons oil
1 potato, minced
1 onion, chopped
1 tomato, chopped
1 cup breadcrumbs
2 eggs, beaten
salt and pepper to taste
oil for frying
Dressing:
2 tablespoons mayonnaise
1 teaspoon mustard
2 tablespoons whipped cream
1 tablespoon chopped celery
1 tablespoon pickle relish
dash of chili sauce

Stuff deboned bangus with a filling flavored
with kesong puti then wrap the fish in bacon and cook until done.

Directions:

1. Remove the shells from crabs. Clean the shells and set them aside. Flake the crabmeat.

2. Heat the oil in a skillet then sauté the potato, onions, tomatoes and crab meat. Season to taste.

3. Fill the crab shells with this mixture.

4. Dredge the stuffed shells in breadcrumbs then dip in beaten eggs.

5. Heat oil for frying then fry the stuffed crabs until golden brown.

6. Combine all the ingredients for the dressing and serve with the cooked stuffed crabs.

Of all Filipinos so delicious dishes , I know this one which makes quiver our Western palates...

We do all appreciate it so much, when our Filipino friends cook it in here. Then it's Fiesta really :)) :P

Chicken Adobo - but why is this in the travel section and not the food section?

¼ kilo pork with fat (cut into very small pieces)
3 tablespoons oil
1 1/2 cup water
2 medium size Ampalaya (cut into 8 pieces each)
2 medium size eggplants (cut into 8 pieces each)
6 pieces okra (halved)
6 pieces tomatoes (quartered)
1 small garlic head (minced)
2 small onions (diced)
1 small ginger (sliced)
4 tablespoons bagoong isda
Pinch of pepper

In a pan, cook pork until lightly crispy, set aside.
Saute garlic, onion, tomatoes, and ginger in the porkfat and mix in pork.
In a casserole, boil water with bagoong.
Add in the pork and spices.
Add all the vegetables and cook.
Serve hot.


PORK ADOBO

1 kilo pork picnic or side bacon belly (cut into bite-sized cubes)
1 cup white vinegar
1 head garlic (finely chopped) portioned into two
3 pcs. laurel (bay leaves)
1/2 cup soysauce
1 cup water
1 teaspoon peppercorn
3 tablespoons oil

In a deep skillet, brown pork in oil.
Add vinegar, soysauce, first portion of garlic, laurel, peppercorn and water.
Bring to a boil, lower the fire and cook uncovered for 10 minutes.
When it gets too dry just add 1/2 cup of water.
Cover and let simmer until pork becomes tender.
In another pan, cook remaining garlic until golden-brown.
Add pork and pour the rest of the adobo sauce.
Serve hot.
