It depends on the province you are in. I assume that you are travelling to China and will want to try out the signature dishes of each province. There really isn't a favourite dish among foreigners. Beijing has its Peking Duck, Sichuan has its claypot spicy dishes, you get the idea. Just take the chef's recommendation and you won't go wrong. Note that a lot of food may be spicy, especially for the Sichuan province so be careful of what you are ordering, just look around at other tables to find out first, or ask the server if the food can be less spicy.
Don't miss out these dishes if you can, "Hainanese boneless chicken rice", "Mapo Claypot Tofu", "Xiao Long Bao", "Siew Mai", "Char Siew Bao/Bun", "Roast Suckling Pig" and " Roast Peking Duck" There are many other dishes which carry the signature cooking style and flavor of the Chinese. Some dishes have a common name but are actually very different depending on the restaurant you go to, like "Buddha jumps over the wall" which differs greatly from restaurant to restaurant.
Anyway if it's your first time dining at a Chinese restaurant, note that you can order your own bowl of rice and keep ordering rice, because they don't usually include rice other than fried rice or soupy rice on the menu. You have to order it seperately sometimes. |

Nationwide, I would say "gong bao ji ding" or kung pao chicken. (I'm talking about within China.) Regionally, it will vary. My part of the world likes beef noodles or chao mian (chow mein). Sweet and sour meat (pork/chicken) is also enjoyed quite a bit.

By foreigners, I assume that you mean non-Chinese (BTW Chinese from China would consider Americans/Britons/Canadians of Chinese ancestry to be foreigners). Well, westerners/foreigners are not a monolithic bunch of ppl and not every person even likes Chinese food. But dim sum is agreeable with most westerners. The scallion pancakes (Nanking cuisine) are also well liked. Except for the fact that many are made with lard. |
