cash in hand is illegal in Australia.
there are jobs that tourists are allowed to do, check with immigration.

Would be best to try for casual bar-keep,cleaner or cab driver.

Yeah.... right! And you think people will tell you such addresses on here in Y!A? And when Immigration catches up with you - don't say we didn't warn you.

Go ahead! Is it worth the risk?

In Sydney and major capital cities around Australia, most pubs, clubs, cafe, and restaurants hire a cash in hand workers like kitchen hand, cooks, chefs, waitress or bar worker cleaner... and there are lots of jobs advertised at the local news paper.
all you need to do is just call in for an interview, don't mention that you don't hold a working visa because there not going to ask you to show them anything just say your a student.
They don't care they will pay you cash in hand something $14.00 - $20.00 Per hour.
or you can do seasonal work as well picking fruits, but that could be a bit risky , sometimes you get the immigration officers checking on the fields, but Australia is so big and there are lots of farms make it impossible to check every farm and farmers are so nice that the will help you find work and even offer you accommodation plus you get paid cash.
all in all Australians are so nice people and they will give you a job if you wer skilled and can speak good English and pay you in cash it works better for them.
