Probably as a tourism attraction!.
The kangaroo in many places is a pest and culling is often mooted as a means to deal with them. We have a lot of drought in the farming areas and kangaroos can move closer to crops in drought times and cause a lot of damage when food and water is scarce in outlying areas.
For tourism, kangaroo leather is a popular product for various items including hats, jackets, vests, stubby coolers (drink holders) etc. Tourists also visit areas like zoos, to see kangaroos in the flesh.
In some areas of Australia the wild population of kangaroos causes a great hazard on the roads with them moving around at dawn and dusk and getting hit by the cars on the open road.
I knew a man once who hit 6 separate kangaroos in his car driving home in one night - a distance of about 60 kilometres.

...........we farm them and sell them as meat. The meat is very popular with tourists and citizens alike. The meat is very lean and healthy and has been eaten by the Australian Aboriginals for centuries. They also prove to be a good for tourism marketing.........tourists seem to be fascinated with the diverse "strange" animals on our Continent and the kangaroo is a sure favorite.
