You will need to contact the customs office before you make any decisions and get yourself a WORK VISA.
If you do not get one, and come to the country to work with a normal visa, you are considered an "Illigal Worker" and you will be deported out of the country and denied clearence to come back in for 4 years.

It really depends on what sort of fishing you are thinking of. Deck handing on charter boats or commercial fisherman. Most ports around Aus offer the choice of both so really you have a good deal to chose from. The biggest are not necessarily always the best either. There are some great holiday and fishing villages dotted all around the coastline. Maybe the best would be to see if there are any jobs going and apply from there.
Oh yeah and either get a work visa or be very very careful about whom you approach. You do not want to get sent back prematurely :)

Try Darwin. There is a huge fishing community there and no doubt job opportunities to go. Research the job availability there thru the Aust Embassy.Good luck.
