I personally loved Ceduna, SA and Esperance, WA...but these might be a bit far away and are much harder to access if you can't drive...
More driver-friendly destinations include perhaps Mildura, up on the Murray river in Victoria (hot in summer but a beautiful spot) and Warrnambool on the Victorian coast!

Gold Coast has a good transport system! And trains into Brisbane City, but the buses go everywhere (shops, beaches you name it) and are always around. Beautiful beaches.
