Living in New Zealand by Thor Edwards is a fine film
Princesspea
Goodbye Pork Pie for comedy (though perhaps it is a bit of a dated form of comedy).
Number 2 or Sione's Wedding was very good about NZ's pacific influence.

"The Piano" is set in 19th century New Zealand. Almost all of the "Lord of the Rings" trilogy was filmed in NZ if you need to know what some of the country looks like. You could also look for Billy Connellys "Word Tour of New Zealand" which may be out on DVD, it was a recent TV series.

Whale Rider or Once Were Warriors come to mind, neither of which are comedies! but both deal with Maori culture.
