Apres ski usually happens after ski, so I guess you don't want that.

Two of the most magnificient trips I've done have been Tasmania sight-seeing in winter. The Gordon River cruise when the mist is rising over Macquarie Harbour is something out of this world.... and the Barossa Valley sitting sipping ports (and anything else going) in front of log fires.

The Canberra wineries offer many of the same wintery experiences (the local ports and muscats are almost non-existent but the lighter reds and even whites with some of the available food are pretty good in front of a crackling fire). Try places like Lamberts and Madews. They match any of the better known Barossa and Clare wineries for style.
