Lot of them have barbeques -- so they eat what they always have at barbeques

Snags on bread with grilled onions and sauce
Meat and veggie burgers on bread with grilled onions and sauce.
Beer or wine

If you are an American living in Oz, then you eat just like an American Barbeque with hot dogs, hamburgers, salads and desserts.

At our house we'll be having a BBQ, snags (sausages), lamb chops, fried onions and various salads, (green salad, potato salad and coleslaw.)

Just like any other weekend really.

Pretty much the same as we would eat on any other day off, e.g. Sunday
What makes you think that it would be any different?

Although barbecues are synonymous with Australia Day (resplendent with the ubiquitous snag or chop), quite a few people also include shashlicks/kebabs, stir fry, prawns, 'gourmet' sausages or burgers, etc. But people also have picnics; or fish and chips at the beach (trying to eat their meal in peace before the seagulls invade). Then there are also the food vendors at some of the organised Australia Day events, where people can graze on different foods from around the world. You'll find spit-roast meats, curries, fried rice, popdogs, buckets of chips, etc.

Pretty much, Australia Day is a giant party; and as long as it doesn't involve too much washing up afterwards, people will eat anything.

Kangaroo? Koala bears? A duck-billed platypus? Never been to Australia, but sure would love to visit there someday. I really do want to see some of those strange animals.
