By far in Canada, UW is the Institution for Technology. The leading companies in Canada AND the US recruit from there.

The University of Waterloo (MY SCHOOL!!) Rated #1 comprehensive University 2 years in a row, and best University overall in Maclean's Magazine annual ratings. Consistently ranks in the top three.
UW boasts the largest mathematics and computer sciences department in all of North America and the most prestigious engineering program in Canada. Not to mention an excellent school of planning and school of architecture, but also a good pre-med program and psychology department. The University of Waterloo is awesome! Check out the website.

The University of Waterloo has a great reputation in IT. For example, RIM, which makes the Blackberry, was started by Waterloo grads in the city of Waterloo.

it really depends on what program you want to study. each university has its own specialities. you can also check out www.macleans.ca which rank universities yearly, but a lot of sources say that most of the judges there are biased since most of them are from UofT. i think globeandmail has their own university ranking as well. good luck and enjoy! :)
---ok didn't read the last part of your question. information technology...hmm.. well they say Ryerson is the leading Polytechnical University and next best place to find real computer geeks are in UWaterloo. :) but that's just what 'they' say. hehehe
