Many people would say Quebec cause that's where you've got the capital but i totally disagree. They are rude, selfish, jerks and drive me crazy everytime i go i can't believe it!
I live in Toronto and everyone that i know that's come to visit has liked it. You can go to the Eaton Centre, the CN Tower, the Air Canada Centre, Paramount Canada's Wonderland and - well it's about an hour and a half away - Niagara Falls which is absolutely beautiful if looking from the Canadian side. There are also many things to do there, including casinos, museums, restaurants, haunted houses and boat rides. Toronto/Niagara Falls if you have time is probably the nicest place to visit.
The East side of Canada is nice (i personally think that everyone in Canada is nice to visit) but probably not one of the nicest places for vacations.
My second suggestion would be British Columbia (although that's completely on the West) if you are into night-life than you should go to Vancouver and like you said you love beautiful scenery and views. The perfect place for you would be Victoria (also in BC) There are many great places to visit, beautiful mountains, and the beaches there are incredible and very close to anywhere in Victoria there are also gigantic trees which i find fascinating (you can find those in many places in BC)
I've been around all of Canada and i suggest Toronto/Niagara Falls in Ontario and Vancouver/Victoria in British Columbia. They are both absolutely amazing, very fun and beautiful places to go to. When it comes to nature, Victoria and Niagara Falls are great... great views and not very polluted. When it comes to night-life and having a lot of fun, Vancouver and Toronto are great and will be an amazing experience!♥

Go to Banff, in Alberta, about 45 minutes from Calgary. There is a hotel there called the Fairmont Banff Springs Hotel and its absolutely the MOST gorgeous hotel I've ever seen, its like staying in a castle. They have amazing food, lovely rooms, and a spa to die for!! Its a world class hotel and the prices aren't that bad. We went for ski season and had a blast but its also has prime summer activities. The hotel is like three blocks from town and in town there is a whole bunch of interesting shops and excellent restaurants. My entire family (20 of them so far) has gone out there and every one of them would go again in a heartbeat.

i think you should go through glacier park montana. they hae a boat in canada they also have a lot of wildlife there

Cape Breton Cape Breton Cape Breton! (The top part of Nova Scotia). All of the Maritime provinces are great, but for the best scenery and culture you gotta go around the Cabot Trail in Cape Breton. If you go in early October you can see all the wicked fall colours and go to some of the Celtic Colours events all over CB island. Here are some sites to look at if you're interested.

The Canadian Rockies have gorgeous scenery and hiking. Newfoundland is interesting too. Any of the Canadian cities I've been to are wonderful especially Montreal.

Moncton, NB is a nice stop, but I'd have to say that Nova Scotia is, by far the best. The bay of Fundy, especially @ low tide, it simply beautiful. There are all these artists living on stilts by the shore...

Path Girl has the best answer. Fly to Calgary and enjoy Banff and Lake Louise.

It is a big country that needs multiple visits.
Practically speaking, if you are going through Niagara, stay on Canadian Niagara and enjoy the view, Butterfly Garden and Niagara on the Lake (toward Toronto). If not already done so, go on the Maid of the Mist.
You can see The Lord of The Ring Play in Toronto and go on top of the CN Tower.
Head to Quebec City. Stay in the old town and take a stroll.
I would add Montreal as well. You should enjoy the Olympic Park with very nice Chinese Garden in the Botanical Garden. The Insectarium was also interesting.
Of course later you should ski at Whistler. Vancouver is a good city. You should swing by Victoria as well.
Banff Spring Hotel is very nice. You can also ski there as well as around Lake Louise. I heard the Calgary Stampede is also big.
I have a few pictures below.
You should not have any problems not knowing French.

I've only been to British Columbia and parts of Alberta so i can only say what i've seen there...

whistler BC
beautiful (aqua blue!) lakes and mountain views (in whistler and on the highway to whistler from vancouver). if you love scenery you'd love whistler

vancouver BC
really nice ocean view.. food is great, it's got a hip, urban feel to it...

Banff, Alberta
lakes and trees mostly, there's an icefield too...

have fun visiting!

Curious
The whole country is great, so I would recommend a via-rail cross country trip.

Vancouver BC ... and a ferry trip to Victoria.
Absolutely gorgeous area.
Got to Banff and Jasper first and the Columbia Ice Fields, then west to Vancouver. One of five most beaitiful cities in the world!!

If you are looking for beautiful scenery then The maritimes is the palce to go. Especially Cape Breton and its Cabot Trail. Google it and you will see what I mean.

You should get a CN railroad pass and do the whole country. I really like the east coast because there is so much stuff to do. There is the Fortress of Louisbourg. You could look it up on the internet. It is in Nova Scotia. It is basically a Fortress that was used in a war and they have a whole bunch of different things to do. There is also cool things like the Cabot Trail and Cape Breton and whale watching. It is all interesting. You also should go to Ottawa, Ontario and visit parliment and there are a couple of other things there. You should also go to Wonderland in Toronto, Ontario.
The West Coast is also very beautiful. It is hard to plan a trip like that because it is a whole country and there are so many different things to do so you should go around the places that are major and just get tour guide information and do it spontaniously.
Hope you enjoy your trip to this wonderful country!!
