day trips in within Toronto ? or day trips just out of Toronto?
Day trips in Toronto are plentiful,
Look around and shop in Yorkville, upscale shops,
Visit the Royal Ontario Museum, at Yorkville too,
and see Queens Park, and the Provincial parliament building
CN Tower of course,
see a full-scale replica of the legendary AVRO Arrow !!! at Downsview aviation museum
Harbourfront, free afternoon and evening concerts and festivals during summer weekends.
Toronto Islands, short ferry boat ride accross the harbour, see a great view of the skyline
"The Docks" great nightclub, and great view of the skyline from there
Scarborough Bluffs, parks on top and marina / park on the bottom of the bluffs (its nicer and less crowded on the top)

Bike some of the extensive cycling trails through the long parks system
See "Pacific Mall" the largest oriental shopping mall in North America

Day trips out of Toronto, the possibilties are numerous.
Going out of Toronto for a day trip; you could go

2 hour drive to Orillia, quaint town with a nice waterfront and a park, and a 2 hour cruise on Lake Couchiching / Lake Simcoe

2 hour drive to Midland, take a boat cruise through the 30,000 Islands. Its a beautiful boat ride on Georgian Bay (Lake Huron)

Niagara Falls and all its stuff like Marineland and Wolf Lodge waterpark

1 hour drive to Sibbald Point Provincial Park, or 1/2 hour drive to Darlington Provincial Park,

Go on a hiking trip through Duffins Creek Hiking Trail, north-east of Toronto, or Heber Down Conservation Area

Visit Campbellford, west of Toronto, and see an Indian village and hiking trails around Crawford Lake Conservation Area

Drive to Brantford, and see Alexander Graham Bell's house

The Science Centre
Canada's Wonderland
Ontario Place
CN Tower
Canadian National Exhibition
If you're interested in shopping or just looking at different stores, try walking down Yonge Street or around Queen's Quay (expensive).
There are many parks to visit ie. Don Valley, High Park (west TO), The Beaches (east TO)
There is a great area of restaurants and theatres around King and Queen Streets (can't remember the name of the area)
St. Lawrence Market is open early in the morning on weekends and that's always interesting.
Hope you have a great time. It's a beautiful city.

You may want to also venture into Niagara Falls (stay on the Canadian side). You have Marineland there, the falls, and many other side attractions like Ripley's Believe It Or Not, Wax Museum. Into gambling? There is Casino Niagara. It's 90 minutes away from Toronto in the event you get all "Torontoed" out. Though that's going to be pretty difficult to do since Toronto has a lot going on.
