If you are backpacking through the country, i dont see what the harm is in doing a little work under the table along the way. However, if you come to Canada to live, you should get a visa. Its not fair to other Canadians who need work before you.

Its always possible to do something illegal in Canada or in any country. The trick is not getting caught.
As for what kind of work you can do...pretty much anything "under the table" where someone is willing to pay you in cash. Otherwise you need to go on the payroll and that will involve you needing a social insurance card.

There were a whole lot of Portuguese immigrants that were caught here last year working for quiet some while in construction.
Probably any cash job that does not require a social insurance number when completing an application.
