A five star hotel is hard to come by as all the hotels listed are like 5 star hotels to the average mortal, but there is certain criteria that must be met in order to achieve that rating some of that criteria makes no sense in really defining what each person values in getting what they believe is a 5 star experience.
In Canada by the way they do not use the star rating they use the Diamond rating. If you want to experience one of the best 4 diamond hotels try the Wedgewood Hotel. here is what they say
"The Wedgewood Hotel & Spa continued in its award-winning fashion this year, being named “#1 Hotel in Vancouver” by Travel + Leisure Magazine for the second consecutive year, and Bacchus receiving the “Best Bar & Lounge in Vancouver” from the Vancouver Restaurant Awards for the eighth consecutive year, as well as being awarded “Best Hotel Dining in Vancouver” again!"
In 2007 the Wedgewood joined the prestigious Relais & Chateaux association, which is recognized as "The collection of the world's finest restaurants and hotels".

BC?
Hotel Vancouver (Fairmont) is really nice. It's right in the good part of Downtown. Other than that there's the Four Seasons and the Pan Pacific.
