Tarte aux oeufs (egg pie) is a fabulous desert that not many know how to make ( Get it off the internet and surprise yourself). You have to try this it's better than apple pie. Ragout de pate de cochons (hog's legs with meat balls in gravy), salmon and wild rice, beaver tails (desert like a flat donut), maple syrup, paté chinois (corn, hamburg meat and potatoes) , tourtière (meat pie), paté au poulet (chicken pie), tourtiere du Lac St-Jean (meat pie with wild animal meat), moose steak, bear steak, poutine (fries with cheese and gravy), canadian bacon, pudding chomeur, cretons, tete a fromage, sun dried morue, lobster. The list goes on.

poutine(french fries with gravy and cheese curds), tourtiere (minced meat pie), pouding chomeur (cake with caramel), beaver tails (fried dough with cinnamon and sugar), salmon, moose, venison, Digby scallops, fried clams...

Timbits!! (Doughnut holes from coffee chain Tim Horton's) LOL, not exactly ethnic, but ubiquitous in Canada. My son's first soccer team was actually called the Timbits, because they were sponsored by Tim's.

It's interesting how most of these tasty dishes are Québecois in origin!
Let's not forget perogies, Nanaimo bars, screech, fiddleheads, pettes-aux-soeurs, milles-feuilles and les Joe Louis! And believe it or not, apple pie! I kid you not!
