I'm visiting toronto on holiday at the end of the month and was thinking of buying one of those nice new ipods from the apple store. As a UK resident can I claim a tax discount and if so how much and how do I claim it?
No, you can't. You pay less tax on it in Canada anyway.

Sorry you can't get any tax back from the feds or the province of Ontario. From the government web site "Due to changes to the law that took effect on April 1, 2007, a goods and services tax/harmonized sales tax (GST/HST) refund is no longer available on:personal goods purchased in Canada after March 31, 2007, by non-resident visitors who take the goods home"

I remember being able to get some tax back so looked this up but unfortunately the scheme was stopped as of March 2007 and you can no longer claim back the tax you pay on goods in Canada and bring back to the UK. Obviously they still have the duty-free in the airport and generally their goods are cheaper anyway, but you cannot get the tax back.
