The main theme park is the PNE - Pacific National Exhibition

Granville Island Market can be fun. It is mostly a food market, but lots of other stuff too, kids stuff and visitor stuff especially in the summer.

Other outdoor activities include Stanley Park, and the Capilano Suspension bridge. Lots of biking and hiking trails up toward Whistler. But you aren't going to find much skiing in July.

Don't be looking for Victoria Island. Unless your trip is taking you North of the Arctic Circle. Worst 7 day vocation I ever took. lol. The reference should be Victoria on Vancouver Island. It is a great place to visit, but you would need the extra time to get there. Schedule minimum of 3.5 hours of travel time each way including the ferry, waiting for the ferry and the drive on each side. Hmmm,? My latest guess is you might be in Vancouver for the whole two months. Then definitely take the time to spend a weekend in Victoria, and a weekend around Whistler!

Barbados Chick
Hit the north shore mountains for every type if outdoor activity you can imagine.
The PNE runs till Sept - rides and exhibits.
Boating, diving - Vancouver and area has the best cold water diving in the world.
History - tho not that old, very interesting.... head for Fort Langley, the start of the Gold Rush and birthplace of BC.
I could go on and on.....we really miss the Fraser Valley.

Gatekeeper
go to the PNE fair grounds, go skiing or snow boarding in the mountains, take a trip to Victoria and go exploring on the island, The fishing is great there. Shopping in the various malls or down Granville st.
You will love it.

LedZeppelin
Richmond Night market (Asian nocturnal outdoor mall-type thing) stanley park (mat still be closed after a recent severe windstorm) granville island is a fun place to walk, with artisans and theaters, PNE or Playland, for a fishing twist, go to Steveston for a nice walk and fish dinner. good luck!

I would search on line for their visitor's guide, and local news paper on line.
