Why do canadians say 'eh' so much?

Not all do. It's the equivalent of tacking on "you know?" or "isn't it? (init)" to the end of a sentence. It is a way of eliciting a response with a statement rather than a question.

it just rolls off your tongue when you have that accent

I couldn't tell you the last time i have heard someone say "eh"
it is glorified by the media as a over used word. when I hear "eh" it is usually a european film

honestly i haven't heard anyone say that in a long time.... i think its just a phrase people associate with being canadian.... much like the beaver,and winter type weather....

'Eh' is something that was picked up from the British in the same way that 'mate' is used frequently in Australia. Both are to the point where they are, of course, stereotypical.
