We don't, but there is a rule to using it.
First of all, you use it in place of What?. So if someone says something and you didn't here them, you'll say eh? Americans will most likely use the word huh in place of eh.
Second of all, you use it when you want to make sure someone is listening to you. I have to use it a lot with my husband. Eh, is making sure he heard me. An example, you're going to put the garbage out, eh? Americans will most likely use the word "right".
Third of all, you use it when expressing doubt. Like when someone says they paid more than $6 for a beer and you say, eh?? Americans would say, "you're crazy".
You need to be careful when using eh. Improper use will most likely label you as an American trying to impersonate a Canadian. You usually find these people backpacking in Europe.... |

IMHO they don't. I am a Canadian that gets my fair share of travels to the US. I find that Americans say eh more than we do, after they find out I am Canadian. But maybe I am not a typical Canadian, as I always want to pop em one in the kisser.
Canadians say eh less than Southerners say y'all. Canadians say eh less than Americans say huh. Americans say "huh!" A LOT! So, if you are American, if you just answer why you say huh so much, the answer about eh and Canadians is probably a related answer. |

It's part of their language, and their lineage. Why do American's say 'like' so much? Why do we say dude? It's as easy as explaining that.. |
