How about a resort east of Ocho Rios in Jamiaca. Tourists generally forget about the Port Antonio section of Jamaica. It's great for relaxing and has some great nature. It's harder to get to but worth the trip.

Take a look at San Andres Island Colombia. I consider it the poor man's Grand Cayman. It is located in the caribbean off the coast of Nicaragua. Don't let the word Colombia scare you off as it is very safe. Check out the website.
