IMHO the three best are:

Flying Fishbone- dining on the beach with your toes in the sand, very expensive food, expensive you are taking a taxi from the cruise ship pier, but VERY romantic and a once in a lifetime experience. You can view their menu and pricing online.

Gasparito Resaurant & Art Gallery- authentic Aruban cuisine, and if you are not daring, they have the best filet mignon. Request a table outdoors on their terrace to enjoy the fountain and stars overhead.

Sunset Grille at the Radisson- steak and seafood, request a table outdoors overlooking their pools and gardens, again, expensive, but their food is amongst the best on the island with a great atmosphere to go along with it.

If you love beef, ElGaucho and Tango can't be beat! Madame Janette's is one of our favorites as well.
You'll probably want to go to Aruba "by air" on another vacation so you can spend more than a day or so. Love it there...no place like it!
