I am a citizen of both Greece and the United States, could I use my Greek passport to visit Cuba one day?

Yes it would be easier to use your Greek passport. That way you won´t need to go through any kind of government licensing to get permission to travel from the U.S to Cuba.
Make it easier for yourself to travel via Canada or Mexico and use your Greek passport.

yes, that would work, but do not let the pasport be seen by the US Customs, you could be charged.

The latest cort rulling was that its legal for americans to go to Cuba but its illegal to spend the money there you would have to cover your tracks well also go through Canada

As a US citizen you are bound to obey the laws even if you have dual citizenship. Keep in mind you can be fined by OFAC for violating the embargo.
