here's a recipe for them
Ingredients
Dry yellow peas - 1 glass
Onions - 3
Tomatoes - 2
Chilly powder - 1 1/2 tsp
Garam masala - 1 tsp
Cinnamon(Karugapatta) - 2 nos
Cumin seeds(Jeerakam) - 2 tbsp
Oil - 4 - 5 tbsp
Bread slices - 6 nos
Potatoes - 6 nos
Green chillies - 8 nos
Ginger - 2 inch
Coriander leaves - 1 bunch
Tamarind(Puli) - 15 pieces
Jaggery(Sharkkara) - 1/4 glass
Salt - As reqd
Sev - 1 cup
Preparation Method
For the Ragada:
1)Soak the peas for 12 hrs and pressure cook for 45 mins.
2)Grind the onions and tomatoes separately.
3)Grind 1 inch ginger and 3 green chillies.
4)Heat oil in a pan.
5)Add 1 tbsp cumin seeds.
6)After 2 mins, add onions and fry till they become golden brown.
7)Add the tomatoes.
8)Once cooked, add the pressured cooked peas, chilly powder and garam masala powder and salt to taste.
9)Cook this well and keep aside.
For the Pattis:
1)Pressure cook potatoes and peel their skin off and mash them well.
2)Dry grind 5 green chillies & 1 inch ginger.
3)Add this to the mashed potatoes.
4)Add 1/2 teaspoon chilly powder and salt to taste.
5)Remove the sides of the bread slices and wet them lightly in water.
6)Mix them with the above mixture.
7)Take a little of this mixture in your hand to make a ball and flatten it.
8)Fry them in oil till they are brown and crispy arrange them in a plate.
For green chutney:
1)Grind 1 bunch coriander leaves with 3 green chillies and salt to taste.
For tamarind chutney:
1)Soak the 15 pieces of tamarind in water and squeeze them completely in water.
2)Boil together the above tamarind water and jaggery till it thickens.
For Serving:
1)Cut one onion into small pieces.
2)In a plate in which you are going to eat, first take a pattis, pour some ragada over it, put some cut onions over this, followed by 1 tbsp tamarind chutney and 1 tbsp coriander leaves chutney. Add sev over them.

I recently went to jamaica and fell in love with the patties. I came home a tried my best to duplicate the recipe. This is very close. DONOT use bread. The jamaican patties are fried or baked in the oven. I like them better fried.
3 pounds lean ground beef
2 cups seasoned bread crumbs
1 (28 ounce) can tomato sauce
1 bunch (1-inch) pieces green onions
1/4 cup soy sauce
1/4 cup Maggi™ liquid seasoning
1 tablespoon salt
1 tablespoon pepper
1 teaspoon vinegar-based hot pepper sauce
2 recipes pie crust pastry
2 eggs
1/4 cup water
DIRECTIONS
In a large bowl, mix together the ground beef, bread crumbs, tomato sauce, green onions, soy sauce, Maggi seasoning, salt, pepper, and hot sauce. You may need to use your hands. Set aside.
Preheat the oven to 425 degrees F (220 degrees C).
Roll out the pie crust dough to 1/8 inch thickness, and cut into 6 inch circles using a large coffee can. Place a heaping tablespoon or slightly more of the meat mixture into the center of the circle, and fold over to make a half circle shape. Crimp the edges together using the tines of a fork, and place the pies on baking sheets. The pies may also be frozen at this point. Whisk together the egg and water in a small bowl using a fork. Brush the egg wash over the tops of the pies.
Bake for 30 to 40 minutes in the preheated oven, until golden brown. If you are baking frozen pies, add an additional 10 minutes. Or deep fry until golden brown. In Jamaica, they are actually deep fried and served with french fries.......awesome! |

For the jamaican beef patty here is a recipe:
INGREDIENTS FOR BEEF FILLING:
2 lbs ground beef
1/2 teaspoon Accent
8 sprigs of thyme
2 ozs escallion
2 small hot peppers
1 teaspoon paprika
half a loaf french bread
1 teaspoon salt
METHOD:
Grind escallion and hot peppers in a mincing mill.
Add to ground beef with salt.
Place meat in a saucepan making a well in the center into which place 4 sprigs of thyme.
Cook without adding any water or fat until meat has lost its broth and only certain amount of oil remains.
Pour off excess oil and add this to the paprika to be used later on, strained for coloring meat.
While meat is being cooked, pour sufficient cold water over bread in a saucepan to cover and soak for a few minutes, then squeeze dry, saving water.
Pass bread through mincing mill and return the ground bread water with 4 sprigs of thyme and cook until bread is dry.
Combine meat and cooked bread.
Add color, paprika in sufficient quantity to color the meat to taste.
Cook together for a further 20 mins.
Add Accent . Remove from fire. Cool for filling pastry circles.
INGREDIENTS FOR PASTRY:
11 ozs suet (beef fat or shortening)
4 cups flour
1 level teaspoon salt
2/3 cup iced water

METHOD:
Trim all skin and fatty membrane from suet and set overnight in freezer.
Next day, with a very sharp knife shave suet as finely as possible.
Combine salt and flour, then work in suet as you would shortening in plain pastry, cutting it in with two knives.
Add iced water in sufficient amount to have a dough which can be rolled out.
Form into a ball and with a rolling pin, pat gently, turning the dough over once or twice in order to have it all properly held together.
Set overnight wrapped in wax paper in freezer.
Next day, pull off enough dough (after defrosting) to roll into a circle the size of a breakfast saucer.
Dip dough in flour before rolling.
Roll quite thin and cut in a circle. (use saucer for help) In the center of each circle place a spoonful of meat, fold dough over to form a crescent shape seal edges with egg white or by crimping the edge and folding dough slightly under.
Do not prick the pastry.
Bake on ungreased tin sheet in a hot oven for about 35 mins.
This recipe will make about 3 dozen regular patties. if cocktail patties are needed, use a smaller cutter than a saucer.
Serving 3 dozen regular size patties.Try different fillings for experiment.

Mmmmm.... Patties.
One of the best meal on the go, in my opinion.
Well, there is the Beef patty- made from Flour dough and ground beef. I can't give you a recipe like that other person (and I doubt whether it is right) basically a Patty is Flaky pastry-like food (like a tart) filled with meat or any other kind of food. It's not sweet, but salty and delicious.
Ever since recently, there are other patties, including chicken, vegetable, cheese (which is really beef with a slice of molten cheese in the middle) and even lobster. You should try one when you get the chance. I guarantee you will like it. |
