I think you should try Sunset Beach Spa and Resort. I loved it there. We went for only $600.00 per person all-inclusive. They have a water park there. Plus you can find many other water and island activities to keep you occupied. It's at least worth a look. Don't worry if you don't see the $600.00 package. Just be patient and it will come up sooner or later. They always have a $600.00 package during the month.

The US Virgin Islands. St John is mostly park land and has many small beaches. Rent a house there with a pool and hot tub. Save some $$ by having breakfast in and packing a lunch.
Cancun and Dominican Republic and Aruba have wonderful all-inclusive deals.
