i want to get some input on how to make good gravy. When i make my rice and peas and chicken my gravy is never up to par like my mom's or aunt's. what do you suggest that i do ?> |

I know you are referring to the way Bajans make their gravy, so here goes. If you are making boiled chicken, then that is your gravy right there. If it is like a sunday and you are doing baked chicken, then the gravy is basically onions sauteed then add water, then a sprig of thyme (which you can take out later) half a carrot fine, some people like a bit of a beet, and of course BROWNING! Some worcheshire (I know I spelt that wrong), some ketchup and paprika. let it boil a bit to reduce, and if you want to add drippings from the baked chicken and a bit of flour.
Come over about 1 pm for lunch, then? Lol |

It depends on what type of gravy you are making, but you need good drippings for great gravy. You should also combine your flour w/ you liquid before adding it to the pan. You also should watch out for adding too much flour, because that will ruin a good gravy. Check out Alton Brown on the Food network, he's got a great recipe that is also broken down step by step. |

if you are making chicken gravy start with some of the drippings from the chicken if you fried the chicken make sure to get some of the crusty bits and pieces in there thats where the flavor is stir in the flour and blend well with the juice/grease it will get thick but thats ok add the milk to that and blend well salt and pepper to taste if you try to add the flour after you add the milk you will get lumps |

what i do to make my gravy to taste good is use the dripping from the chicken add flour then chicken stock then add seasoning salt, pepper to taste. I hope this helps you out. |
