If you buy US Dollars in Canada, then change to Dominican Pesos, you will lose twice on changing the money. Either bring your own currency or just get money out of an ATM for the best exchange rate.

You'll want to be sure that you have extra money for any souvenoirs that you might to bring home.
If you want to enjoy attractions off of resort, those will cost you extra.
The DR's currnecy is the Dominican peso and 1 Canadian dollar is worth around 28 pesos.

Buy American dollars in Canada before you leave. It has a really good exchange rate there and it's also widely accepted.

Most vendors will take canadian dollars but will try to cheat you on the exchange. If you go to a bank ther you will get the fair exchange rate for dominican pesos. I have found that I can get better deals from local vendors useing US dollars or EUROs.
