I have heard that the Mexican Peso gets very bad rates, so it may be that a double change is better.

You can also read these links for money information. As well, be sure to convert your money back before leaving Cuba as CUC have no value outside of Cuba.

No matter what you are doing with currency as a rule of thumb stick to one conversion. In your case assuming you are a Brit change your Sterling to Convertible Pesos (CUC) when you arrive in Cuba. You cannot buy them prior to arrival. See the conversion site below it will give you a rough idea of the rate.
