This is from the Naparima Girl's High School cookbook...
Jub Jub
4 tbsp. gelatin
1.5 cups water
4 cups granulated sugar
few drops lime juice
few drops food colouring
1. Dissolve gelatin in 1 cup water
2. Boil sugar and remaining .5 cup water until the syrup falls like thread
3. Remove from heat
4. Mix syrup into gelatin and stir until gelatin dissolves
5. Add lime juice and about 3 drops food colouring
6. Pour into a wet dish. Let stand for 3-4 hours until set.
7. Cut and roll in sugar
Makes 24
Toolum
4.5 cups brown sugar
1 cup molasses
6 cups grated coconut
6" dried orange peel, finely chopped
1 tbsp. grated ginger
1. Heat sugar until it liquefies
2. Add molasses and coconut and stir until well blended
3. Add orange peel and ginger and continue to cool on low heat, stirring until mixture leaves the side of the pot easily
4. Remove from heat and drop by tablespoon on a lightly greased tray
5. Allow to cool and harden. Store in an airtight container.
Shape in balls if preferred.
ENJOY!!!! |
