Here nuh, I am a seasoned Trini but I had my first pineapple chow a few years ago from a lady by de road side on Carnival Tuesday. When ah tell yuh it was good.... an I doh even eat pineapple!! It make meh lick de plastic bag it was in yes!!

Ent yuh know everyting trini make is good.
From doubles with ah lil pepper to Maracas bake and shark.
Oh doh forget the cassava pone, toolum, tamarind ball. Oh lawd most important ah good bowl ah mango chow or any kinda chow with pepper to make yuh nose run.
Tuh drink, ah cold briskly Carib or a red solo tuh go with that roti. |

OK ah goin Créole style on allyuh, some of these might not be know to some of you but its Trinidad original creole style food, some of the names are creole but that what I know them by
roti nice, roti sweet but den it have
Callalou and Touloulou (Touloulou is a kind of crab)
Curry Crab
Accra tastes nice too, du riz noir (black rice)
Broul djol nice and peppery
Papilion (Papaya candy)
Lambi (conch) cooked in a cream sauce
salt fish and bake
bake and shark
La Morue (another style of salt fish)
Punch de Creme
Roselle (Sorrel)
Halé Filé ( a stretchable taffy)
Koulé Wilé (Oil Down?)

If it done right nothing, nothing could beat a cow heal soup, but wait, a bulljouw (bull -jow - forgive my spelling) and fry bake good too.
Oh lawd, how I could forget the simple hot hops and cheeze with a hot cup of chocolate way yuh have to grater the seed you get from the market and then strain it and add condense milk.
Shoot, doh forget the only edible fruit cake around Christmas time. When mami using the fruits she ha soaking in rum since July and then finally bake the cake 10 pm Christmas eve so the whole house smelling good Christmas morning.
