Roti is flattened roasted flour.
We use a thing called a tawah (baking stone) to make it.
There are mainly 4 types of roti including
Sada roti
Dosti roti
Dhalphurie
Buss up shut
Sada roti is what we use like a breakfast item... is like bread.
It going with everything... eggs, salt fish, smoke herring, cheese... anything at all.
But to make this... you knead the flour with baking powder and make it into small balls called a loi.
The... you take a rolling pin or bilnah and roll it out flat and put it on the tawah and turn it till it raise.
Dosti roti is also used for breakfast although it not as popular as Sada roti.
Its a kinda mock Buss Up Shut too.
Its made similar to Sada except after you make the loi... you flatten it out in your hand into a small flat circle and then you use oil to bind it to about three others in the same way...
You roll it out with the bilnah and den you put it on de tawah...

Use a dabla (a special flat stick) to beat and turn it.
Dhalpurie is very very common.
Its more a lunch/dinner type roti.
You just fill de same loi with dhal (split peas).
You must boil de dhal and grind it up first.
Then you roll out de loi with the bilnah... oil de tawah so it won't stick as well and you use your dabla to turn it until it swell.
If you beat it you spoil de roti.
it will pop and the dhal will fall out.
And Buss Up Shut...
This is a heavier roti than dhalphurie but its used as a lunch/dinner item.
Its heavier because of the ingredients they use to knead de flour.
Make it into lois as well and when it gets on de tawah... you take the dabla and beat it to burst it so as to ensure the whole thing is cooked.
No roti is a spicy food except if you making pepper roti... which is dhalphurie made with pepper.
For that... you grind lots of pepper with the dhal (and I mean more pepper than dhal) and cook it the same way.
But largely no roti is spicy.
What is spicy is the accompanying food item...
You can eat it with nice curry duck... or channa and potato or chicken or whatever you feel like. |

Basically, it's a flakier, more flavorful version of a tortilla that sometimes has split peas in it, I believe? Shops in Trinidad sell curry beef, chicken, shrimp or something else wrapped in the roti to tourists for a dirt cheap price. It's really good. |
