What can I not leave San Juan, PR without seeing/doing?

A friend of mne wants to go on a cruise and though the cruise has activities available I've learned from experience you find some of the most awesome things by asking people who have been there and locals.

I will be in San Juan from 7am - 3:30pm

I just want to know what should I see/do that the cruise ship may not have on their list?
what are some great places to get afforadable authentic Puerto Rican cusine? and what should I get?

thanks for all the help!
Additional Details
Thanks for all the help everyone. I know usually the best cultural experiences are a little further in but since I don't have time this trip I guess I'll just have an excuse to go back to PR :-D

You will be pushed for time to get to El Yunque rainforest which would be one of the 'must see' places here in Puerto Rico.

It takes about 1 hour each way by car (so it is feasible, if everything fell inplace - ship docks on time, car rental is there waiting).

But, I would probably go with a simple tour of Old San Juan (if you have not been before).

Walk to El Morro (top end of Old San Juan), take a tour, then slowly make your way back through Old San Juan checking out:
The Cathedral
The Governors Mansion
Old San Juan Gate
The many squares in Old San Juan

Plenty of places to grab some food and drinks

End up with a stroll along the Paseo La Princesa.

I would go for a walk around the moro. Near Old San Juan there is a path that you can walk around the coast. It is beautiful. Buena Suerte and don't judge PR based on San Juan. The real 'flavor' of puerto ricans is inland. I know, I just moved here from Ohio.

For 7 am to 3:00 pm you don't have much time to go the places other people said to you, the traffic in here is like hell and from the ship dock, the time you spend in the rent car office and the traveling time between Old San Juan to Luquillo is around 2 1/2 hour to get there, you need more than 2 hour to see the Yunque and 2 hours more to get back and you left our island to your home town without and other experience of PR. My recommendation is this when you go down your ship take your left and walk straight a head to the " Paseo La Princesa" over there you can see at your right the wall that guard the city in the time of the Spanish occupation, then you can see our first jail ( right now is a government building, and is at your right side) then walk straight and you found the fountain of races and part of the San Juan Bay (awesome view) in this point when you see at the top of the wall you can see a white building with wood windows and doors, that "El Convento De Las Siervas De Maria" (Nuns Convent and old people shelter) this convent was build in the 17 th century, the building near that is "La Fortaleza"( also white but the windows are vitrals) our white house (builded by the spanish for defence but when they end the constrution find out that this building can make that because when they see the enemy, the enemy was on the bay near the entrence) at one point you found and entrence, that was "La Puerta De San Juan" one and the only reminder of the entrence to the wall city (San Juan Gate) over there you are entering to the first site of the Old City (like the spanish time) walk ahead and you found the San Juan Catredal (were Marc A and Dayanara Torres married)this street in freont of you and the church was "La Calle Del Cristo"( at the end of this street at your right you see a little chapel, thsi chapel was building like said a legend in honor of a horse race that take place in the 16th century between two men, one of them can stop at time his horse and both of them jump over the brick wall and be alive, near this chapel was "El Parque De Las Palomas") when you see the catredral at front(here you can see in one of the interior chapel the mommy of St. Pio, this mommy was a gift of the Pope in that time to the people of PR) at your left side you see our "Hotel El Convento" one of our oldest building, in here establish our firts monk convent( over here you can see the first floor of the building) when you get out of the hotel take your left and go straight ahead to the "Plaza San Jose" over there you found the most old church in all latin america "Iglesia San Jose" (Saint Joseph Church)right now is under retauration and you can go inside, in the street in front this church we celebrate our most famous festival in January "Fiestas De La Calle San Sebastian" (in here you can found very good restaurants like "EL Patio Sam"), near that is "Plaza Del Nuevo Milenio" and at the left of the plaza was "El Cuartel De Ballaja" our spanish soldiers building and then a jail (right now a museum) from over there you can see our first cementery (here are buried most famous ilustrated people) and the huge fortress you see at front was "El Castillo De San Felipe Del Morro" one of the most oldest fortress in the Americas, beside one of the most biggest (fee was $7.00 per person and you spend around one hour here).

There is always Old San Juan an awesome spot for shopping and history including art galleries. Take a tour of the fort itisvery interesting and your bound to get good pictures. I enjoyed the shopping. If you rent a car you can drive through the rain forest and go from the Atlantic to the Caribbean Sea you might see passion fruit or a water fall or two (I did).

Old San Juan - near where the cruise shiop will dock. See the 16th century fort El Morro. Eat some of the food from the carts. Empanadilla, tostone, and some rice and beans.

It is gorgeous. El yunque rain forest- beautiful w/ waterfalls, but you probably won't have enough time b/c it is in another town. Definitely visit El Morro(fort in San juan) that is the #1 tourist attraction & its amazing. You can buy tickets to go in it. & walk the beautiful colored streets of Viejo(old) san juan. People speak english in San Juan & other big towns. There are lots of shops & restaurants in San Juan, also the casa blanca- gov't white house. & a 16th century cathedral close by. Tour guides can take you to most major attractions. The bacardi factory is close by, they give cool tours as well. Its ashame you don't have more time b/c there is so many other great things to do & see on the island further out. & the food is good. Try everything local.
