I have never heard of it.. Also what are some of the more popular foods in Trinidad, I will love to try a little of everything.. Are the foods really spicy as people say? A friend told me that I should try something called doubles, but ask for no peppper as the pepper is like fire from hell..lol |

Roti is just the best thing in the world to eat. You would love it.
Roti features prominently in the diet of many West Indian countries, especially Trinidad and Tobago, Guyana and Suriname. West Indian roti are primarily made from wheat flour, salt, and water. They are cooked on a tava. Certain rotis are also made with butter. There are several types of roti made in the West Indies:
Sada Roti: Similar to naan. It is cooked on a tawa, therefore the bottom is not crisp like that of a naan. Because it is the easiest one to make, it is the most commonly consumed roti in Trinidad. It is a popular breakfast option in Trinidad, in combination with tomato choka, baigan choka (eggplant), and other vegetable dishes.
Paratha Roti: A roti made with butter, usually ghee. It is cooked on a tawa. Oil is rubbed on both sides, then it is fried. This gives the roti a crisp outside. When it almost finished cooking, the cook begins to beat the roti while it is on the tava, causing it to crumble. It is also called 'Buss-Up-Shut' in Trinidad because it resembles a 'burst up shirt'.
Dosti Roti: A roti where two layers are rolled out together and cooked on the tava. It is also rubbed with oil while cooking. It is called dosti roti because the word dosti means friendship in Hindi. This type of roti is eaten in Guyana with a special halva when a child in born.
Dalpuri: A roti with a stuffing of ground yellow split peas, cumin (geera), garlic, and pepper. The split peas are boiled until they are al dente and then ground in a mill. The cumin is toasted until black and also ground. The stuffing is pushed into the roti dough, and sealed. When rolled flat, the filling is distributed within the roti. It is cooked on the tava and rubbed with oil for ease of cooking. This is the most popular roti. Another version of this is aloopuri, which is made from potatoes.
Bake: Another item prepared like roti is bake or bakes. Dough is rolled out and cut into shapes or rolled into small rounds. These can be baked in an oven, but they are usually fried in oil. They are sometimes called frybake. Bake are usually paired with a fryup for breakfast or dinner, or with stewed saltfish. |

Benne Ball;A delightful (and somewhat jawbreaking) confection made out of semame seeds
Buljol:Salted cod fish shredded and seasoned with peper , onions, tomatoes ann olive oil, ofen served in coconut bake.
Calloo:Made from spinch-like dasheen leaves and okra; other ingredients may include coconut, crab and pigtail.
Coconut Bake:A type of bread made with grated coconut, often eaten at breakfast with buljol or cheese
Cou-Cou:A mixture of cornmeal,orka and butterboiled and stired unitl stiff enought to be sliced. Usally served with streamed fish or callo
Crab and dumblings;A filling savoury dish in which the carb is stewed with curry and coconut milk and served with flat flour dumplings
Doubles;Curried channa (chick peas), sandwiched between to baras ( fried flour and spilt peas bread) usally eaten with a dollop of hot mango kucheela
Oil down:Bread fuit is the main ingreatdient here,combined with salted meat and boiled down in coconut milk. Called 'Rundown" in jamaica
Pastelles;Meat filled corn dumpingd cooked in banana leaves. Vegetarian vartions are filled with soya or lentil peas.
Pelau:Pigoen Peas and rice cooked with meat , sometimes flourved cocnut milk.
Roit:A flour wrap,accompanied by curried meat( goat, chicken , lamb , shimp,beef) or vegetables. Dhalpourie made with spilt peas, is a thin wrap,paratha roti ) often called buss- up- shut) is served in frangments, used to scoop up the accompanying dishes, sadha roti is slightly stiffer, usually served with choka,- vegetablessauteed Indian style
Shake and bake:Frien leavened bread (bake) filled witha well seasoned shark fillet, dressed with a,varitey of spicy condiments, including garlic, peper,and chadon beni ( cilantro) sauses.
Souse:Pig trotters boiled and served cold witha salty sauce of lime, cumcumber , onion and peper..

Veronica Roti is sort of like a tortilla - there is a flat, unleavened bread and it can be filled with any thing you want! Of couse the most popular item is curry - and that is curry anything - meats, vegies, you name it! There are also many types of Roti - such as:-
Sada - more breakfast type, we fill it up with veggies mostly, but I like it with saussage!
Buss up shut - this is softer than a baby's bottom! It is broken up into bite sized pieces and you dip into your curried platter - which could be curried potato, channa, pumpkin, mango, goat, chicken, beef, duck - just to name a few (this is my favourite?
Dhalpurie - This one is the roti you can wrap the food into so its not messy and it is an ideal on the go lunch! Inside the skin is a layer of crushed split peas which enhances the flavour! A good dhalpurie is not messy! others will have the peas falling out!
Jamacia have they own thing, but this info here is from Trinidad and I am sure the Indians have a wider variety!
OTHER LOCAL FOODS
Pelau - rice with stewed pigeon peas in coconut milk (served with coleslaw, green salad and any meat)
Curried crab and dumplings

Roti is like a flat bread that is soft and filled with curry of any kind ie chicken, shrimp, goat, vegetables etc. There are roti trucks set up the way we have ice cream and french fry trucks set up here in Canada. Beware of the trucks. Hygiene may not be the first priority for some of these and there is no diarrhea like a curry diarrhea!
